So every time I’ve tried to make crepes in the past, they’ve always been too eggy, or hard to roll up. Today when I woke up, I had an epiphany on how to make the perfect crepe (is it weird that food is my first thought when I wake up?). I realized that in my previous attempts, I had over complicated the recipe and put too much thought into it. This is honestly the easiest recipe ever and took me about 10 minutes to make. That’s it! Combine the ingredients above in a blender and blend until smooth. Pour 1/3 of the batter into a heated, sprayed pan, and then proceed to cook the crepes one at a time. Cook on medium for about 2-3 minutes on each side, or until you think they look as done as you like them. Once you have 3 crepes, roll them up with a filling of your choice. I used strawberries and bananas that I tossed in honey.
