Vegan, plant-based, vegetarian… what does it all mean anyway?
That’s how I felt before I changed my diet. I heard these words thrown around time and time again but never understood what they really meant. Plant-based diets sound kind of weird, and kind of scary right? At least that’s what I thought. When I first changed my diet, I had NO idea what I was doing. When I say I was a novice in terms of food, I mean it.
After suffering through years of digestion problems, and meals that left me feeling tired, sluggish, and unhealthy, I knew I had to make a change. That’s when I discovered plant-based eating. I saw people eating tons of fruits and vegetables, but crazy delicious meals. I was so intrigued. While It was definitely a lifestyle change, I noticed results almost immediately. My stomach stopped hurting, I slept better, and I felt better overall. Switching to a plant-based diet has benefitted me in SO many ways and I can’t wait to share everything I have learned with you!
Throughout this book, I want to show you how fun and delicious plant-based eating can be, and how you can incorporate it Into your life, too!
Something to note: While you can jump In 100% to a plant-based diet like I did (I recommend giving it a try – you will feel great), you’re also welcome to incorporate these recipes into your regular diet! Maybe it’s a meatless Monday meal, or a few nights a week – you will notice the changes and effects In any way you choose to incorporate it. Find what works best for you!
