Every time I make these tacos and put them on Instagram, SO many of you guys reach out and ask for the recipe. Honestly, I’m not even surprised – buffalo cauliflower wings are something everyone loves. Carnivores, your veggie friends, people who don’t care about food at all – everyone comes together for this recipe. After time and time again of bringing buffalo cauliflower to parties and hearing “I can’t believe it’s so good” makes the recipe feel pretty full proof. I’m telling you, even my friends/family who swear against liking vegetables are super into these. They’re special.
For this recipe, I decided to take the buffalo cauliflower a step further and add it into one of my favorite foods: tacos. If you’re like me and love Mexican food and flavors, this will be RIGHT up your alley. It’s a little spicy, a little cool, very fresh, and as always, pretty dang healthy. We *love* a meal that’s so multi-faceted (insert applause here).
As promised, in these buffalo cauliflower tacos, I’m using some of favorite Mexican flavors. While I love buffalo sauce, sometimes it can be a little overwhelming alone. A tip for those of you guys who don’t love spicy stuff: pair it with something cooling! Whenever I eat a spicy food, I make sure to have a cooling element on hand like an avocado, a dipping sauce, a lemon, etc. It really helps you to enjoy the meal in a whole different way! No burning mouths here, just delicious flavor.
The cooling elements I added to the tacos with the buffalo cauliflower were chopped lettuce, cilantro, green onions, Wholly Guacamole, and a vegan ranch. All of these flavors together are TOO GOOD. As someone who’s obsessed with avocados and guacamole but has a hard time finding ripe ones in the store (or they’re too ripe, it’s so frustrating!), I often opt for Wholly Guacamole because they take the guesswork out of enjoying delicious avocados and guacamole. We all know how annoying it can be to find a perfectly ripe avocado when you need it, so I love that with Wholly Guacamole, there’s no need to worry about under or over ripe avocados since they always use avocados at the peak of their ripeness.
I love using this guac on veggies, with chips, or in other recipes to give a fresh and cool flavor. You guys also know I’m picky about the products I purchase since I want them to healthy, so I love that Wholly Guacamole is made with hand-scooped Hass avocados, real ingredients, and no preservatives.
