Peanut Butter Frosted Fudge Brownies

I’m pretty picky when it comes to brownies.

Because I’ve never really been a chocolate person, I am always pretty had to impress when it comes chocolate desserts. Thats why I just knew that these brownies were IT when I first tasted them. Super chocolate-y, sweet, and completely guilty tasting.

Honestly, no one would ever guess that there isn’t a million over-processed, nasty ingredients in them. It’s safe to say that I am obsessed with these (especially the frosting). There is just something comforting about them.

It’s the kind of comfort you need when you’ve worked a 12 hour day, gotten rained on, bombed a test, spilled on your favorite shirt, stepped in dog poop, or any of the ridiculous annoyances that happen daily.

These brownies are like getting a big hug from 10 of your best friends while standing in a room full of kittens.

Yep, they’re that good.

Peanut Butter Frosted Fudge Brownies
Yields: 6 brownies

Dry

• 1/4th cup whole wheat pastry flour (I buy this at The Christmas Tree Shoppe or on the internet)
• 1/4th cup cocoa powder
• 3/4 cup sweetener (I did 1/2 stevia and 1/4th coconut sugar)
• 1/2 tsp baking soda

Wet

• 1 egg
• 1/4th cup almond milk
• 1/4th cup unsweetened applesauce
• 1/4th cup peanut butter
• 1 tsp vanilla extract
• 1 tsp chocolate extract (optional)

Frosting

• 1/2 cup powdered peanut butter (or regular peanut butter if you don’t have powdered pb)
• 1/2 cup sugar free powdered sugar (or regular) (I used this one)
• 2 Tbsps honey or agave
• 1/8th cup almond milk

1. Preheat your oven to 375 degrees.
2. First, grab two bowls. Mix your dry ingredients in one, and your wet ingredients in the other.
3. Once both are evenly mixed, add the wet into the dry and mix thoroughly.
4. Once your brownie batter is all mixed together, pour it into a baking pan (I used a 4×4) and cook for 22-25 minutes.
5. If you like brownies fudgey-er, take them out earlier 🙂 I found them to be cooked perfectly at 25 minutes. Let them cool until they are no longer hot.
6. Once they are at room temperature, mix together the frosting ingredients listed above and frost your brownies. Though the frosting is already pretty thick, I like to put the brownies into the fridge to set for a bit after I have frosted them.
7. Whenever the brownies/frosting are at your desired temperature, take them out and devour them!

Ps. these are sickeningly addictive. I may or may not have finished this entire recipe alone in one day (oops).
