Cauli-fried rice. Sounds weird, right? Whenever people first hear of cauliflower rice they don’t really understand it. How can cauliflower taste like rice? It’s actually so much easier than you think.
Once the cauliflower is chopped and mixed for a bit in a food processor, the consistency turns almost exactly like white or brown rice. Now, why would we want to do this when rice already exist? First off, cauliflower is 27 calories per cup, and 6 carbs. Rice on the other hand is 216 calories per cup, and 45 carbs per cup. That is a HUGE difference.
Even though there is nothing wrong with rice, cauliflower rice is a great volume food. If you’re like me and enjoy large serving sizes, this is for you. Because of its extremely low calorie content, you can eat a tonnn of it.. Sounds great, right?
* I use microwave steam fresh veggies. You can buy them pretty much anywhere and they take about 5 minutes to cook in the microwave. You can use raw veggies, you will just have to steam them before you add them into the fried rice.
