So apparently today is national chocolate chip day. I was very excited about this, because who doesn’t love chocolate chips? This creation came about because I had to use up some tofu in my fridge, and wanted to eat some chocolate (everyday). This is super tasty and filling. The tofu supplies this mousse with tons of protein, but by the taste, you’d never know it was healthy!
Yields: 2 & 1/2 cups
Before putting the tofu into the blender, drain and press it with a paper towel to remove the liquid. Then, as is routine, I just dumped everything into my food processor, and blended it until it was smooth. Pour the mousse into a bowl or let it sit for a couple of hours to get colder. Serve when it’s at the desired consistency!
