I looooooove bliss balls. I’m such a fan of anything cute, little, and snacky. I know most people think snacking is bad, but I totally disagree. When you’re snacking on ridiculously tasty caramel balls packed with nutrients, what could be the problem with that?
I also really enjoy any recipe that I can pop in the food processor, then put in the fridge. Two steps? Okay, I can do that (honestly, I get pretty lazy with things that take more than 5 minutes). I like how whenever a sweet craving hits, I can just walk over to the fridge and pull one of these little babies. Packed with carbs and protein, these are sure to fill your snack hunger and satisfy your cravings.
Now, what makes these taste like caramel? The best fruit in this universe: dates. Dates are such a godsend. It’s hard to believe that these sugar-sweet fruits are naturally grown. They seriously taste like CANDY. I promise these bliss balls will make anyone think that they’re eating a sugar-laden caramel ball. Just this morning my brother popped one in his mouth and said “wait, are these ACTUAL healthy? I really don’t believe you”. And that my dears, is how I know that these are a success.
Raw Caramel Bliss Balls
Yields: 10 balls
Time: 5-10 minutes
Place all of the ingredients above in a food processor and blend until a cookie-dough like consistency forms. Then, roll the dough into balls. I made 10 balls but how many you get depends on how big you make them. Once all of your dough is rolled into balls, place them in the fridge for 1 hour to harden up. Even though you can eat them right away, once they’re in the fridge they stiffen up and become less sticky.
Personally, I really like these when they’re rolled in shredded coconut! It’s completely optional, you’re totally welcome to leave them just as they are in the third picture.
