I truly love mint everything. The color, the taste, it’s all so beautiful and refreshing. It is definitely on the list of my favorite things ever. Even though chocolate is incredible in its own glory, I think adding mint to it gives it a nice change of pace. If you love french toast, and you’re a mint chocolate chip lover, this is for you.
Yields: 2 pieces of french toast
Mix all of the ingredients above in a bowl (can even blend for easier mixing, I just whisked with a fork). Dip both sides of your bread in the bowl, then cook them in a pan until the egg is fully cooked on both sides.
For the mint cream, I mixed homemade greek yogurt (dairy free), 1/2 tsp of mix extract, and 1 tbsp of stevia.
