The Best Sweet Potato Lasagna (Easy and Vegan)
Lasagna… it’s one of those dishes that is delicious in every single form. It’s cozy, filling, and one of the ultimate comfort foods. Growing up, I ate a lot of lasagna coming from an Italian family LOL (anyone else?). I’ve grown to realize that it’s a dish that everyone puts their own spin on, and can be done in so many amazing ways.
So I thought, why not try a potato lasagna? While you all know I’m a pasta girl at heart, sweet potato lasagna is *highly* underrated. It’s healthier, lower carb, and PERFECT for thanksgiving and the holiday season! Plus, you’re getting in an extra serving of veggies in every bite. Who can say no to that?
One of the best things about this sweet potato lasagna is that it takes less time since there are no noodles to boil ahead of time, and all of the ingredients are really simple. Here, it only takes up a few ingredients to bring together this delicious dish:
- Marinara sauce – Something you can buy anywhere!
- Vegan ground beef – Any brand works, I typically find this in the frozen section with the other meatless items.
- Cashew ricotta – A super easy cheesy spread made out of a nut base. You will love this!
- Daiya Monterey Jack Style Block – This is one of my favorite non-dairy cheeses since it tastes so close to real dairy. It literally reminds me of the cheese I grew up eating and I love it. I cube this cheese for cheese boards, and love slicing it for crackers! Here I shredded it so it was easier to sprinkle. Available in Cheddar, Jack, Jalapeño Havarti, and Smoked Gouda Styles.
I’ve been a big fan of Daiya for years now as it was one of the first brands I stumbled upon when going vegan and because they’re committed to delighting your senses with its *large* line of delicious, better-for-you foods, that are dairy, gluten, and soy-free. The Best Sweet Potato Lasagna (Easy and Vegan)
Serves: 10-12
Lasagna:
- 1 jar of marinara (24 oz)
- 2 cups vegan ground beef
- 1 block of Daiya Monterey Jack Style Block
- 2 cups of sweet potatoes (about 4 large potatoes)
- Cashew ricotta
Cashew Ricotta:
- 2 cups of cashews
- 2 cups of lemon juice
- 1/4th cup nutritional yeast
- 3/4 tsp garlic powder
- 1/3 scant tsp sea salt
- 1/3 cup water
- Preheat the oven to 375 degrees.
- First, make the cashew ricotta. Add all of the ingredients above to a blender, and blend until smooth. The texture should look like a thick, spreadable cheese! If it’s too thick, add a bit more water.
- Remove from the blender, and set aside.
- Next, add the entire jar of marinara and vegan ground beef to a skillet over medium heat. Let them cook together for 5-6 minutes until everything is heated through. Set aside.
- Now, it is time to chop the potatoes. Chop them into small, thin discs.
- Once they are chopped, it is time to assemble the lasagna. Grab a baking pan (I used a 9×13) and grease the bottom and sides with cooking oil (just so nothing sticks).
- Start by adding the sweet potato disks in rows, slightly overlapping the one before them.
- Once they are layered along the bottom, spread a later of the cashew ricotta on top, covering the sweet potato disks.
- Next, add the vegan ground beef & marinara sauce. Lastly, add the Daiya Monterey Jack Style Block (I shredded this using a shredder).
- Repeat to make another layer. Add additional Daiya Monterey Jack Style Block on top, and bake in the oven for 50 minutes.
- Once the 50 minutes are up, place a fork into the lasagna. If the potatoes are tender, remove from the oven. If they’re still a bit hard, cook for around 10 more minutes. Remove from the oven, and let cool for around 10 minutes.
- Sprinkle chopped parsley over the top of the lasagna (optional), and cut into squares to serve!
