A fact: pad thai is COMPLETELY under-rated. With so many amazing flavors wrapped up in one dish, its impossible not to love it. If you’ve never had Pad Thai, now is your time to get addicted. Swap out your classic noodle dish with marinara, and sub in a sweet & spicy sauce, peanuts, loads of cilantro, and tons of crunchy vegetables. Can you say YUM?
As a gal who finds herself drawn to recipes that are full of flavor and won’t require me to be in the kitchen for hours (ain’t nobody got time for that), Vegan Pad Thai is a staple in my house. Traditionally made with rice noodles, Pad Thai serves as a healthy, low-cal option to a filling dinner with loads of flavor. It’s also great for when you’re running short on time, as the entire process (start to finish), takes less than 20 minutes.
To add a protein boost, feel free to add some grilled tofu or crispy chickpeas. This recipe can easily be doubled, or even tripled, for extra leftovers or a family meal prep. It’s also super adjustable – so don’t be afraid to make it your own. Add more lime if you love it, fewer peanuts, or loads of cilantro. Whatever floats your boat!
Ya know, the ones that require 100 ingredients and have a million steps. Not necessary. That’s why, if I’m posting a recipe on here, you guys can trust and believe that it’s going to be easy as pie. Another cornerstone of my favorite meals? The price. While expensive food is a treat every once in a while, I often prefer to make recipes with really easy to find, cheap ingredients. This entire recipe cost me around $15, and that was if I bought every single ingredient. Chances are, you’ll have half (as they’re pretty traditional pantry items) – so it will be around $8. Four BIG servings for the price of one sandwich from a cafe? Count me in.
